Here is the recipe for the cocktails that will be served during the opening ceremony of the Olympic Games

Led by Yossi Ifergan, LEBARPARIS* (which is designing the mixology menu for all the hospitality areas of the Paris 2024 Olympic Games) gives us a sneak preview of two cocktail recipes that will be served at the opening ceremony of the Olympic Games. Here are two alcoholic and non-alcoholic drinks to make at home.

Utensils to provide for preparing cocktails

To make the cocktails we suggest, you will need a shaker to mix the ingredients; a measuring cup for the quantities; and a trainer (a special cocktail strainer) to extract the pieces of ice from the cocktail when pouring it into the glass. If you don’t have these utensils from the “cocktail kit”, make do with what you have. The shaker can be replaced by a gourd or jam jar; the measuring cup by an egg cup or shot glass; and the tainer by a sieve! Now, let’s get to the recipes.

A preparation that puts cognac in the spotlight, “the emblematic spirit of France”. Its sweet notes, “brought by apricot and orgeat, contrast with the powerful aromas of Chartreuse and vinegar to create an Umami flavor and a perfect balance”. A nod to three great landscapes, “the meeting between the city, the fields and the French mountains”. For the garnish of this cocktail, the isomalt disk is a sweet decoration, with the appearance of glass and in the shape of a disk. Ingredients

3 cl of Hennessy Cognac
3.5 cl of Bergeron apricot nectar
15 ml of homemade orgeat syrup
15 ml of verjuice
5 ml of green chartreuse
5 ml of homemade honey vinegar
3 drops of Magic velvet

Recipe instructions

Use a Martini-type glass (if you don’t have one, a regular glass will do). Chill the cocktail glass by placing ice cubes in it. Add ice to the large part of the shaker, then, in the small part of the shaker, pour the following ingredients: orgeat syrup, verjuice, honey vinegar, green chartreuse, apricot juice, Hennessy cognac, then the drops of Magic velvet. Now comes the “drying the ice” step. Take the large part of the shaker again, and empty the water inside, keeping only the rest of the ice. Combine the two mixtures contained in each part of the shaker. “Shake” (stir) for 8 to 10 seconds, then remove the ice. Do a “dry shake”, which consists of shaking the shaker again, but this time, without the ice. Maintain the movement vigorously for 8 to 10 seconds. Remove the ice from the cocktail glass that you placed at the beginning of the preparation. Using the trainer (or fine strainer), “double-filter” the preparation over the glass. For a pretty presentation, add an edible flower to the center of the glass and serve!

2024, a non-alcoholic cocktail

An alcohol-free recipe for a minimalist cocktail with floral notes “obtained through the infusion of butterfly flower”.

Ingredients

2cl of homemade elderflower cordial
4cl of butterfly flower infusion (butterfly flowers can be found online or in specialist grocery stores)
2 cl of Verjuice
15 ml of fresh organic grapefruit juice
50 cl of 100% natural French tonic
Branch of thyme from Provence
Ice cube

Recipe instructions

Directly into a glass (cocktail glass, Rocks type if you have one), pour all the ingredients. Stir everything gently, add an ice cube to the glass, then place a sprig of fresh thyme on top.
