What to do with eggs?
The egg is a classic in cuisine, whether bistro or gastro. In fact, it is not uncommon to find deviled eggs, simple hard-boiled eggs, generously garnished with mayo, listed on the menu of the local bistro. And the cheese omelette too. This famous pancake dressed entirely in eggs, wrapped in its shawl of cheese or ham, or even both, which is not to be outdone in French establishments. As for scrambled eggs, they remain a must in the trendiest spots when Sunday comes. Neither one nor two, we reappropriate these recipes, and this ingredient, so banal and multidisciplinary at the same time.
Easy recipes with eggs
The advantage of the egg is that it can be prepared in multiple ways: soft-boiled, scrambled, fried, hard-boiled, casseroled, in an omelette, soft-boiled, or even poached. In reality, cooking the egg depends on the final recipe. If you want to prepare a salad, you will go for a hard-boiled or soft-boiled egg. If you want a creamy preparation, it will be the brouillade or the omelette that will be our favorites. If you swear by a runny yolk, nothing beats a boiled, fried, soft-boiled or poached egg, served with a nice Hollandaise sauce. Seasoned with fleur de sel, ground pepper, fresh herbs, Espelette pepper or a few spices, the egg doesn’t need much to be divine! But the egg is not only used savory, it is also popular in dessert, like in the floating island for example. But in the sweet version, the egg generally does not play solo and must match its score with many other ingredients.
Recipes with egg whites
It is not uncommon that in certain recipes, such as crème brûlée for example, only egg yolk is used. As a result, we often find ourselves with three or four whites lying around in the fridge, and we don’t know what to do with them. Don’t panic, they already keep for a long time in the fridge without spoiling and you can use them to prepare financiers, meringue to use in pavlova for example, in a mousse, macaroons, or even cat’s tongues .
