Cubes of meat are often combined with vegetables, sprinkled with herbs or spices. If you want to “grill” in a classic way, add pieces of pepper (red, green, yellow, orange, or all four together), red onion, or zucchini. But you can also use cherry tomatoes, button mushrooms, bacon, chorizo, or merguez sausages. Also a good idea is to add fresh fruit such as figs, peaches, apricots, or plums, which give a sweet side to the dish.

The right marinade to enhance beef skewers
To give maximum flavor to meat, nothing beats a good marinade. Based on teriyaki sauce for Japanese-style skewers; garlic, ginger, chili or mustard for spicy grills; or spices (ras-el-hanout, curry, tandoori mix, cumin, cardamom, etc.), we don’t hesitate to be generous for a tasty marinade. Our favorite recipe? A marinade based on chopped garlic, shallot and spring onion, ketchup, soy sauce, and oil, which we cover the meat with before letting it marinate. Good to know: it is best to finely chop the garlic, ginger, shallot, onion or lemongrass before adding it to the marinade so that its flavor can fully diffuse. The ideal marinating time? It all depends on the size of the meat cubes, but you can marinate beef for around 4 to 12 hours, stirring the meat regularly if the marinade does not cover it completely.
