How to make a homemade scotch egg?

We’re getting into British style with homemade scotch eggs.

It’s surely one of Britain’s most popular snacks. Besides, does it really live up to its name? Because according to several theories, this bistro specialty does not come from Scotland but rather was born in London. More precisely, it would be a recipe created by Fortnum & Mason, a London department store, in 1738. However, the exact origin has never been proven.

The only certainty is that the British love for this breaded egg, who eat it both hot and cold, during a picnic, is limitless. You can even find them pre-packaged in supermarkets, although they have become rarer since Brexit and the pandemic.

The scotch egg recipe

The scotch egg is an emblematic recipe of English cuisine. It consists of coating a pre-cooked and peeled egg with sausage meat, then breading it “English style”. Everything is then fried in oil. When cut, the crispy exterior contrasts with the softness of the stuffing and the tenderness of the egg. The holy grail is to ensure that the yolk remains soft, despite the two cookings. A hard yellow, however, remains acceptable.

Preparation: 15 mins
Cooking time: 6 mins

For 4 people

  • 4 eggs + 2 eggs for breading
  • 300 g sausage meat
  • 1 tbsp. mustard
  • 1 bunch of parsley
  • salt and pepper
  • 50 g of flour
  • 100 g of breadcrumbs
  • frying oil

Bring a pot of water to a boil. Cook 4 eggs for 4 minutes, then immediately immerse them in iced water.
Once cooled, peel them.
Chop the parsley. Mix it with the minced meat with the mustard, then season.
Coat each egg with sausage meat.
Beat the remaining eggs.
Coat the eggs cooked in the flour, the beaten egg and the breadcrumbs successively.
Heat the oil to 180°C, and cook the breaded eggs for 3 minutes for a runny yolk, or 6 for a firmer yolk.
Drain them on absorbent paper before serving.

If you have beaten eggs and breadcrumbs left, bread the eggs a second time, before frying.
