Cordon bleu is the comforting recipe par excellence.
A childhood memory for many, it traditionally contains thin layers of chicken, ham and cheese, well nestled under a crispy breading. Today, I offer you my version of cordon bleu, always with chicken, but also bacon, sweet and sour pickles and raclette cheese. For a touch of originality and more flavor, I garnished the English breading with smoked paprika.
My advice
- Cordon bleu is prepared with all white meats: turkey, veal, pork, etc.
- I chose bacon, but white and raw ham, speck or chorizo also lend themselves perfectly to the exercise.
- For cheese, choose the one you like, favoring those that melt easily in the heat.
- Opening the chicken fillets means cutting them on the thicker side, sliding the blade into the thickness of the flesh, but without going all the way so as not to separate the two pieces.
- You can cook the meat only on the fire, but be careful, the breadcrumbs must not burn! Finishing cooking in the oven guarantees a perfect, stress-free result.

For 4 people
4 slices of raclette cheese
4 slices of bacon
2 large sweet and sour pickles
4 chicken fillets
2 tbsp. oil soup
25g butter
For the English breading
2 eggs
100 g of breadcrumbs
1 C. teaspoon smoked paprika flour

Cut the cheese and bacon slices in half. Slice the pickles.

Place the chicken fillets on a cutting board. Incise them and open them like a wallet.

Cover them with cling film.

Flatten them with a pan.

Salt and pepper with a grinder.

Add two half circles of bacon on half of each cutlet

Then strips of pickle

And finally slices of cheese.

Fold the other half over to enclose the filling inside.

Pour the flour into a deep plate. Beat the eggs in a bowl. Mix the breadcrumbs and paprika in another deep plate.

Dip each cordon bleu in flour

Then in the beaten egg

And finally in the breadcrumbs.

Dip them in the egg and breadcrumbs if there is any left.

Preheat the oven to 180°/th. 6. Heat a frying pan over high heat with the oil and butter. When the oil is simmering, sear the meat for 1 minute 30 seconds on each side to brown the breadcrumbs. Finish cooking by putting the cordon bleus in the oven for 10 minutes. Serve immediately with a well-seasoned green salad.
