The right seasonal ingredients
We say it and we will repeat it ad vitam aeternam, in cooking it’s like in fashion, you have to follow the seasons! For what ? Because seasonal fruits and vegetables that are grown locally are a mine of essential vitamins, which do not need to cross half the globe to reach our plate. Or worse, have not matured in the hold of a boat or the hold of an airplane… And we’re not even talking about the ecological impact! By favoring seasonal products, we benefit from foods that fit perfectly with our budget but also with our seasonal desires. Indeed, what a joy to find year after year stalls filled with colorful squash, mushrooms in various shapes, or crunchy nuts.
Good pasta
Whether you choose to prepare a pie – or even a fall pizza – or a quiche, the dough is very important. Whether it is soft and plump as part of a homemade pizza, crunchy for a pie, or flaky for a quiche, the possibilities are numerous.
You can obviously prepare a classic dough based on white flour but you can also opt for a gluten-free dough, a version based on rye flour, or topped with grated parmesan for more taste. And to play on seasonality to the fullest, why not replace part of the flour with hazelnut powder in its preparation?
Fall spices are all good
When we think of “autumn” it’s impossible to ignore spices, as they are so closely linked to this season. Cinnamon, ginger, four spices, cloves, cardamom, anise, nutmeg, so many flavors to integrate into a pumpkin, mushroom, onion, or even apple or pear pie in a sweet and sour version. Also, we don’t hesitate to use cream and cheese in our tarts and quiches for comforting dishes as desired.
