Plum and blackberry cake with bay leaf


  • 500 g pitted plums
  • 250 g blackberries
  • 1/2 tablespoon(s) cinnamon
  • 1 teaspoon(s) of vanilla extract
  • 5 beautiful bay leaves
  • 200 g of sugar
  • 4 egg yolks
  • 100g of flour
  • 150 g of almond powder
  • 150g melted butter
  • 4 egg whites beaten until stiff


  1. In a bowl, place the pitted plums, blackberries, cinnamon, vanilla extract and bay leaves. Sprinkle with 50g of sugar. Leave to rest for 30 minutes.

  2. Whisk together the egg yolks, 150g of sugar, flour, almond powder and melted butter. Add the beaten egg whites.

  3. Place the dough in a baking dish lined with parchment paper. Add the fruit, bay leaf and juice, bake at 180°/th. 6 for 40 to 45 minutes Serve lukewarm.
