Quesadillas with grilled vegetables and AOP Maroilles
Ingredients
- 50 g from Maroilles PDO
- ½ bell pepper yellow, seeded, cut in half and flattened
- 1 thick washer onion peeled red
- 75 g tomatoes cherries
- 25 g spinach leaves
- 2 tortillas
- ½ c. coffee Spices (paprika, chili, Mexican spice mix, etc.) of your choice
Instructions
Trim

Heat a large skillet over medium-high heat. Add the pepper (skin side down), onion and tomatoes. Cook, without stirring, for 2 to 3 minutes, until the vegetables blacken in places.

Turn them over and continue cooking, without stirring, for an additional 2 to 3 minutes, until they blacken on the other side.
Assembly

Remove the vegetables to a cutting board. Let cool slightly.

Cut the pepper into strips, cut the onion ring into strips and the tomatoes into cubes.

Put the vegetables in a small bowl and add the spices, then mix.

Garnish half of each tortilla with half of the Maroilles AOP and half of the spinach. Divide the vegetables into thin slices.

Fold each tortilla in half over the filling and press lightly.
Cooking

Clean the pan.

Place the tortillas in the pan over medium heat and cook for 4 to 5 minutes, turning once, until golden and crisp.

Cut the quesadillas into pieces and serve with a sauce (salsa, herb cream, etc.)
