Tadoka Norohy continues its work on flavoring with three new references: Ginger, Lemon Verbena and Pepper. After Vanilla, which gave birth to the concept in 2023, then Smoked, the range now includes five flavors. All are based on the same principle: a solid dose of 4 g to grate or melt, designed to instantly release its aromas.

This new collection marks above all a change of territory for Norohy, historically associated with the world of vanilla and pastry. Ginger, lemon verbena and pepper now widely open the door to savory culinary creations, while retaining their interest in pastries, chocolate and ice cream.

Launched in 2023 and rewarded at the Sirha Innovation Awards, Tadoka was born from an idea as simple as it is ingenious: offering aromatic materials in the form of a solid dose, directly usable by professionals. Each Tadooka weighs 4 g and can be used without prior preparation, by being grated or melted in a recipe.

The support is made of Valrhona cocoa butter, chosen for its neutral character and its ability to encapsulate the aromas then release them when melting or grating. The range is formulated without water, without sugar, without additives and without preservatives.

For chefs, the interest is also very concrete: the dosage is precise and reproducible, the gesture is simplified and the material is used without loss. A particularly interesting principle for controlling costs and guaranteeing the regularity of a recipe.

Tadoka maybe grated directly on a preparation Or melted into a mass. This dual use allows you to work with a cream, a ganache or an ice cream as well as a sauce, a juice or a savory creation.

The current range is therefore designed as a real bridge between the worlds of pastry and cooking. Valrhona Selection also presents it as a flavoring solution intended for pastry chefs, chocolatiers, ice cream makers, restaurateurs, hoteliers and caterers.

With these three new features, Norohy considerably broadens the field of possible associations. Each has its own profile and its own field of expression.

Tadoka Ginger, freshness and spice

Made from ginger from Peru and Ecuador, Tadoka Gingembre develops notes of fresh, lemony, zesty and slightly spicy ginger. Its lively profile allows it to quickly add flavor to a preparation, without having to work with fresh ginger.

In baking, it can accompany chocolate, citrus fruits or exotic fruits. In savory cooking, it naturally opens the way to fish, shellfish, vegetables or sauces to which it brings a fresh and spicy tone.

The Valrhona Selection product sheet indicates a dosage of 2 to 3 doses per kilogram of preparation. It also specifies that a dose of 4 g corresponds to 50 g of fresh ginger juice.

Tadoka Lemon verbena, a vegetal freshness

With Tadoka Lemon VerbenaNorohy highlights French lemon verbena from the Alpes-Maritimes. Its profile is distinguished by fresh, lemony and vegetal notes.

A particularly attractive signature in pastry, where it can bring a delicate freshness to a cream, a ganache, an ice cream or a fruity dessert. But lemon verbena can also find its place in savory creations, particularly to accompany fish, vegetables or citrus preparations.

Valrhona Selection currently indicates availability of this reference from September 22, 2026.

Tadoka Pepper, character without excess spiciness

More unexpected, Tadoka Pepper combines two complementary varieties: Jamaican pepper, grown in Mexico, and Sichuan green pepper, originally from China. The result is not presented as a spicy combination, but as an aromatic signature built around citrus fruits and spices.

This composition allows it to bring character and depth without taking up all the space. An interesting idea both for enhancing a chocolate preparation and for giving a new dimension to a sauce, meat, fish or vegetable.

Valrhona Selection also describes this Tadoka as a dose of pepper with a “unique and complex” aromatic signature, usable for grating or melting.

With Tadoka SmokedNorohy had already started to move out of its historical territory. Made with PDO smoked sweet pepper from the province of Cáceres, in Spain, it brings smoky notes to both sweet and savory preparations.

The three new references extend this opening. The range now includes:

  • Tadoka Vanillawith the combination of Planifolia and Tahitensis vanillas;
  • Tadoka Smokedfor smoky notes;
  • Tadoka Gingerfresh, zesty and slightly spicy;
  • Tadoka Lemon Verbenafresh, lemony and vegetal;
  • Tadoka Pepperwith accents of citrus and spices.

The strength of the concept therefore lies less in a single application than in its ability to support chefs in very different registers.

Tadoka’s interest is ultimately twofold. Aromatic, first of all, since it allows you to quickly find a precise taste signature. Operational, then, since it transforms the addition of an aromatic material into a simple and reproducible gesture.

For a professional, this means fewer weighings, less preparation and better control of the dosage. The right dose also becomes a way to better control the cost price and limit material losses.

It is precisely this notion of “just the right dose” which is at the heart of the name Tadoka. According to Norohy, it combines “Tada”, which in Malagasy evokes the accuracy of proportions and meeting, and “Auka”, which means “easy” in Papuan.

The three new references are dosed at the rate of 2 to 3 doses per kilogram of preparation. They can be grated or melted depending on the desired result.

In pastry and chocolate making, they can flavor creams, ganaches, biscuits, ice creams or chocolate preparations. In the kitchen, they allow you to quickly work on a sauce, a juice, a vegetable preparation or a recipe based on fish and seafood.

This versatility is precisely one of the major developments of the range: Tadoka is no longer just a different way of working with perfumes, but a real tool for aromatic expression for professionals.

Tadoka Pepper

With these three new references, Norohy affirms its desire to support catering professionals beyond pastry. The brand is thus expanding its know-how around aromatic materials with a collection that focuses on precision, regularity and ease of use.

The new ones Tadoka Ginger, Lemon Verbena and Pepper are offered in 250 g sachetsor approximately 60 doses, via Valrhona Selection. The advertised professional rate varies from €18.50 to €56.25 per unit depending on the references.

A small dose, therefore, but a now much larger field of expression.
