Spread the dough on a sheet of baking paper using a rolling pin until it is 5 mm thick. Cut out the biscuits with the cookie cutters and bake them. Leave the cookies to cool on a rack.
In a bowl, mix the egg whites with the icing sugar.
Divide the mixture into three small bowls and add the colorings to each, mix and transfer each icing into a piping bag.
Cover your shortbread with icing by first tracing their outlines, then filling them.
Let dry and finish decorating with the edible pens.
