If club sandwiches are the kings of takeaway meals, savory cakes also deserve their place in our picnic basket. Like quiches or spring vegetable tarts, you can prepare them in large quantities and then share them. Perfect for a friendly, hassle-free picnic.
How to make a soft savory cake?
To prevent the cake from being too dry, it is necessary to be generous with eggs and fat. For a gluten-free cake, replace the wheat flour with equal quantity of chickpea flour plus 1 tbsp. tablespoon of cornstarch.
The basic recipe for savory cake
For 6 persons
- 150 g of T45 flour
- 1 sachet of baking powder
- 3 eggs
- 10 cl of olive oil or sunflower oil
- 10 cl of milk
- 250 g of garnish
- salt
- a knob of butter
Place the flour and yeast in a salad bowl.
Add the eggs and mix.
Gradually add the olive oil and milk.
Add the garnish, salt if necessary.
Butter the cake mold, pour the mixture into it.
Bake for 35 minutes at 180°C.
A few tips
- Add salt at the last moment to adjust according to the filling. Dried tomatoes or certain cold meats already provide enough salt.
- For individual cakes, pour the batter into muffin molds, and bake for 20 to 25 minutes, at 180°C.
- Check the cooking by inserting the tip of a knife into the cake. If the blade comes out clean, it's ready, otherwise, continue cooking for a few minutes.
- If the mold is well greased, you should be able to unmold the cake while it is still hot. Let it cool on a rack.
- Wait until the cake is cold or warm before cutting into pieces, this will prevent it from falling into crumbs.
- Transport and store the cake in an airtight container to preserve its softness.
What to put in a savory cake?
Sun vegetables, diced feta, chorizo or mortadella… The cake toppings can be varied as you wish. First, you have seasonal products: asparagus, tomatoes, peppers, zucchini, peas… Then, cheese, for indulgence. For sunny days, we will tend to favor mozzarella or fresh cheeses, such as goat's cheese or feta, rather than Reblochon. If you wish, you can also add bacon, smoked salmon or diced chicken to the recipe. Finally, we finish with spices, pesto, fresh herbs… In short, any ingredient that will give flavor to the recipe. Easy.
Be careful, some canned vegetables, cheeses and fish release water when cooked. Make sure to drain them well before adding them to the cake maker.
You can also precook the vegetables to release as much moisture as possible. As for cheese, for example, prefer dry mozzarella “for cooking” which is not immersed in water.
