How to make a sweet pie without baking?

Whether you lack the equipment or it’s too hot to turn on the oven, there are a thousand and one reasons to try no-bake desserts. And you’ll see, it’s even simpler than it seems!

The base

Goodbye, shortcrust pastry, shortcrust pastry and puff pastry, the base of a no-bake tart consists of a raw base.

The biscuits

The first option, also one of the easiest, is to prepare a tart base with biscuits and butter. Exactly like in the cheesecake recipes. To do this, choose your favorite biscuits (Breton shortbread, speculoos, oreos, etc.) and crush them into crumbs. If you don’t have a blender, place the cakes in a freezer bag. Close, then crush them with a rolling pin until you get powder.
Melt butter and mix it with the biscuits. Pour the mixture into the tart pan and press down with the back of a spoon to obtain a smooth and uniform tart base. Refrigerate while you make the rest of the recipe.

The vegan and gluten-free base

For the second option, you’ll need dates, oatmeal, nuts, and a blender to bind it all together. You can also add nut butter, seeds, shredded coconut, cocoa… basically, whatever you like. Just be careful with the amount of sugar you add, because dates already contain some.
Place all desired ingredients in the bowl of a blender and blend until smooth. Then line the pie dish as explained above and let sit in the refrigerator.
This version, in addition to being compatible with gluten intolerance and a vegan diet, has two advantages. Not only is it completely homemade, but it also contains many nutrients thanks to the dates, nuts and oats.

The filling

Lemon curd, whipped ganache, mousses… You are spoiled for choice when it comes to preparing a tart base. The only criterion is that the filling does not require baking. So forget about almond creams and flan mixtures, and opt for no-bake preparations based on fresh cheese or whipped cream. In a vegan version, we use plant-based yogurts or silken tofu instead.
Also, panna cotta or fruit curds are tolerated, since they cook in a saucepan.
