Three excellent reasons to put winter risotto on the menu.
A complete dish in itself
Cooking vegetables, starchy foods and proteins without taking out three pots, two frying pans and a colander is a real challenge. To get around the problem, there is only one solution: focus on all-in-one family dishes such as gratins, stews and especially risottos. Recipes that have the merit of combining deliciousness and efficiency. What more ?
The recipe is easy
The principle of risotto is always the same, once mastered, it can be reproduced as desired. To do this, brown an onion and risotto rice (arborio or carnaroli) in a pan with oil. Once the rice has become transparent around the edges (we say that it “pearls”), we deglaze with white wine and let the rice absorb it. As soon as it is done, pour in the broth, ladle by ladle, making sure that the liquid is completely absorbed between each addition, until the rice is cooked.
Remove from the heat, add parmesan before mixing and leave to rest for 2 minutes, covered.
Now that you know the basic recipe, all you have to do is innovate.
It can be declined in a thousand ways
Risotto is like a good plate of pasta, you can put whatever you want in it. Chicken or shrimp for protein; Reblochon or Comté to provide deliciousness and vegetables to stock up on fiber and vitamins. Of course, we won’t teach you anything by telling you that it’s better to choose seasonal vegetables. In winter, for example, we will put mushrooms, squash or cabbages in the spotlight. In short, an ideal winter dish without an oven!
Another suggestion for changing classic risotto is to use different cereals. Instead of rice, we opt for crozets, quinoa or barley. However, the rest of the recipe is identical.
