The art of seasoning
To upgrade a simple squash soup, nothing beats spices and herbs. Ginger, turmeric, garlic, red or green curry paste, red or white miso, Espelette pepper, everything is good to give flavor to the dish. We also think of flavored salts to add at the end of cooking to adjust the seasoning, such as truffle, lemon, or herb salt.
As for serving, don’t hesitate to add fresh herbs, chopped oilseeds, or even roasted pine nuts to your soup for texture, particularly if it has been blended.
