A blend of fragrant and colorful spices, curry is an essential in our cupboards that slips easily onto our plates.
What is curry?
This may seem surprising but, no, curry is not a spice. It is actually a mixture of spices based, depending on the preparation, on turmeric, coriander, ginger, cumin, pepper, chilli or even paprika. In India, curry (formerly called Kari) refers to a family of sauced dishes that use this blend of spices in their preparation. The result ? A plate full of colors and flavors.
Each color of curry has its own flavor
Contrary to popular belief, curry is not only yellow. The different compositions and dosages of spice blends create the many varieties of curry that exist.
- The most famous is the Madras curry known to be very fragrant. It is an essential in the kitchen. It is a yellow curry made with turmeric, which is easily used savory. It approaches the Bombay curry by its color and its not very spicy taste.
- For an even milder curry, you should opt for the green curry composed of spices, but especially herbs and sometimes green peppers.
- THE red curryfor its part, is characterized by its flavor, but also its spiciness, unlike yellow and green curries.
- Surprising but just as good, the black curry, naturally dark or even black, is a typical blend of Sri Lankan cuisine. For the more daring, head to India. Orange in color, the spicy side of Indian curry means that it is often used in sauce dishes, based on coconut milk, cream or yogurt, in order to soften the spiciness of the mixture.
Uses of curry in cooking
Curry is easy to handle in the kitchen. You just need to carefully dose your use. Don't hesitate to taste your dish several times. Even though it is used in the preparation of many Indian dishes such as tikka masala, biryani or rogan josh, it can be suitable for less traditional recipes by bringing an exotic touch to more Western flavors. In a soup or to marinate meat or fish, curry can be eaten in all sauces. One thing is certain: it will add character to your plate.
