The arrival of sunny days is the best excuse to organize an aperitif worthy of the name. On the menu ? Seasonal fruits and vegetables, each fresher than the last.
Colorful toasts, miniature sandwiches, skewers, or even gourmet verrines, appetizers have the gift of transforming Friday evening aperitifs into a festive occasion. They are also infinitely adaptable both in taste and visual terms. Indeed, here, the presentation is as important as the taste, and that is what makes all the difference. So, for a stunning spring aperitif, we take inspiration from the rainbow and opt for colorful bites, the most beautiful tribute we can make to seasonal foods.

In terms of quantity, you should count on around 5 to 8 bites per person. Obviously, as always in cooking, too much is better than too little. So don't hesitate to plan a few extra portions (especially if your guests have a sweet tooth).
An instant feeling of freshness
Who says freshness says seasonal fruits and vegetables, and that's good, since in the middle of spring, many of them resurface on the shelves. Asparagus, multicolored radishes, strawberries or cherries bring a breath of fresh air to the kitchen, thanks to their high water content. Indeed, as nature is well designed, seasonal foods are in accordance with our nutritional needs depending on the time of year. Thus, fruits and vegetables that grow in the middle of spring are rich in water, like tomatoes, and allow you to stay hydrated when temperatures start to rise.
Synonymous with freshness, cucumber is very simple to cook and comes in many ways. As an aperitif, it can be slipped into the heart of spring rolls; between two slices of sandwich bread for an elegant English tea time sandwich; or as a base for a cream cheese and smoked salmon bite.
And for the final touch, we generously sprinkle our little appetizers with a drizzle of olive oil, lemon juice, citrus zest or fresh herbs. Enjoy your food !
