Cold soup, or gazpacho depending on the recipe, is a classic of the summer season, which can be made in many different ways.
Cucumber, tomato, zucchini or pepper, all fit wonderfully into cold soups. They are perfect for the summer season since they are refreshing as desired. Enhanced with spices, aromatic herbs such as mint or parsley, or vinegar for acidity, seasoning is essential to these preparations. Since the ingredients are generally left natural before being mixed, cooking cannot enhance their flavor with a nice caramelization. So we do not hesitate to add chili pepper, smoked paprika, intense olive oil, lemon juice, balsamic vinegar, mustard, in short, anything that gives flavor.
Vegetables and fruits: the ideal combo for a perfect cold soup
While Andalusian gazpacho prepared solely with vegetables remains the benchmark, you can also add fruit to sweeten the dish. Obviously, the ratio between fruit and vegetables must be respected if you want to stay on the “savory” side of the story. Strawberries, melon, watermelon, raspberries, all are suitable for preparing a lovely summer velouté with sweet and savory notes.
