Ingredients

  • 1 kg of spinach
  • 2 onions

  • 2 cloves garlic

  • olive oil

  • 2 eggs
  • 250 g crumbled feta
  • 2 tablespoons of mint

  • butter

  • 8 to 11 sheets of filo pastry

  • salt and pepper

Preparation

  1. Fry 1 kg of spinach, trimmed, rinsed and drained, then leave to rest in a sieve to drain.

  2. Brown 2 chopped onions and 2 crushed garlic cloves in a little olive oil.

  3. In a large bowl, mix the squeezed and chopped spinach, onions and garlic, 2 eggs, 250 g crumbled feta, 2 tbsp chopped mint, salt and pepper. Set aside.

  4. Butter a cake tin, place 6 to 8 sheets of filo pastry in it, brushing them one by one with melted butter.

  5. Pour the spinach mixture, cover with 2 or 3 sheets of buttered filo pastry, close well and place in the oven for 40 min at 180°C/gas mark 6.
