Between snow, low sky, wood, fir tree, fireplace and cheese flavors, winter is a season, yes, but also a whole universe.
If winter vegetables remain the essentials of our current menus, they are not the only ones to garnish our plates. Among the favorite flavors of cold days, the best, the gourmand, the king, the one and only: cheese. Smooth, gratinated, in sauce, croquettes, or melted, whatever the variety, cheese wins all the votes.
Cheese, but which one?
While France has no less than 1,200 varieties of divine cheeses, which one should you choose in your winter recipe? We would like to answer you “It doesn’t matter, as long as you like it!” “, but some are more in keeping with the season. Fresh cheeses, for example, will bring freshness when summer returns, when matured pasta reveals the best of themselves in gratin, fondue or raclette.
One cheese, several uses
The advantage of cheese, like Comté, Gruyère, Abondance, or even Cheddar, is that it can be prepared in different ways. Cubed to revive a winter salad, grated for seasonal vegetables au gratin, or mixed for an addictive cheese fondue. Cheese adapts to all recipes, even if this season, we prefer it melted, without any hesitation.
