How to cook leeks in winter?

In light version

Low in calories and rich in vitamins and minerals, we adopt leek during winter for healthy and tasty recipes. It also contains a large amount of fiber, known to promote the feeling of satiety. Good reasons to make yourself a fitness ally during the season.
Leek white can be cooked in soup, velouté or broth. In the classic version: it goes well with potatoes and carrots. For an original velouté, we rely on a combination of leek, sweet potato, coconut milk, very gently. Finally, leek is also available in detox recipes, for a winter in top form.
Have you had enough of liquid recipes? Opt for cooking that does not require the addition of fat, such as steam cooking or cooking in foil. They also have the advantage of preserving a maximum of nutrients. With a fish fillet and seafood, it’s a real treat.

In a gourmet version

When it comes to preparing this vegetable in a delicious way, we often think of leek fondue. It is true that in addition to being easy to make, it is an excellent accompaniment.
However, you can also choose to put the leek in the center of the plate, making it its main ingredient. I promise, you won’t lose any flavor. To make it more appetizing: use cheese and cream. You will be able to prepare generous dishes, which will delight the whole family.

A little word about leek greens

Waste is a scourge that we can limit. So, throwing away the green leek is out of the question! More bitter and stringy, it contains as many nutrients as the white, or even more. Its content of vitamin C and A, the famous beta-carotene, is in fact higher. Another reason to cook leeks from scratch, without wasting.
On the practical side, know that leek greens can be cooked in the same way as white leeks: in quiche, gratin, soup, salad… If necessary, to soften it, add 1 tbsp. teaspoon of sugar in your preparations, such as in vanilla leek tart.
Another tip: keep the leek greens and let them dry in a dry place. You can use it to make bouquets garnis, and add flavor to a broth.
