Fried rice with eggs


  • 4 eggs
  • 400 g of rice from the day before
  • 30 cl of neutral oil
  • 4 cloves of garlic
  • 1 ginger root
  • 2 large shallots
  • a bunch of kai lan or, failing that, broccolini

  • 4 tablespoon(s) soy sauce
  • 2 tablespoon(s) of sesame oil
  • 1 bunch of spring onions
  • 2 tablespoon(s) fish sauce
  • 1 tablespoon(s) chili oil


  1. Heat 20 cl of oil over high heat in a saucepan, add the finely chopped garlic, ginger and shallots.

  2. Add the kai lan branches, without the leaves, then the soy sauce and the rice. Mix, then add the sesame oil and kai lan leaves.

  3. Slice the spring onion then put it in the pan with the fish sauce.

  4. Fry the eggs in a hot pan with the remaining oil. As soon as they are crispy, remove them from the pan.

  5. Arrange the fried rice in each bowl with a fried egg on top and drizzle with chili oil.
