“In April, don’t uncover yourself by a thread” the famous saying advises us. He could also have said “In April, green never fades” a sign that renewal is in nature but also in the plate.
Vegetables, vegetables, and more vegetables
In April, that's it, finally, spring truly makes its return to the plate and the stalls are filled with more and more young shoots, early vegetables, and products full of freshness. On the menu, we therefore include pretty green and white asparagus; crunchy radishes; mouthwatering peppered artichokes; crunchy peas; juicy strawberries; and tangy rhubarb. All complemented by fresh cheeses and aromatic herbs like wild garlic, which always add more green to the plate.
Easter at the corner of the grove
What would April be without Easter, its lamb, its chocolate, and its hidden eggs? Whether you prefer another meat, or a vegetarian Easter menu, the idea always remains the same: enjoy yourself with your loved ones! And if the idea of making your own chocolate eggs at home doesn't appeal to you, you can obviously trust the greatest pastry chefs and chocolatiers with their most beautiful Easter eggs 2023! Otherwise, a simple chocolate cake will always make people happy around the table.
Which April recipes to choose?
Among the possible delights this month, green reigns supreme in salad, toast, pancake, ballotine, or cannelloni. Freshness will also be relevant with certain recipes such as sea bass carpaccio or no-bake strawberry tart which fall into the box of desserts called “fridge cakes”. Easy to make, these are prepared with a biscuit base, a cream, a mousse, or a ganache, then everything firms up quietly in the fridge. Ideal when you don't want to turn on the oven.
