Making the link between winter and spring, Mars plays duality on the plate.
7 menus are better than one
If March fruits and vegetables are on the program – always in season, we don't change a winning team – this time, we wanted to offer you themed menus. Special extreme cold; brunch; of leader; comfort; of our regions; cocktail dinner ; or even spring, will be on the menu this month.
Obviously, these 21 recipes are suggestions that you can mix together.
Winning associations
Side extreme cold, we focused on the delicacy of the county in a cauliflower velouté; then the fondant beef cheek with cider; to finish with crunchy chocolate crème brûlées. Between tradition and a touch of originality, these inexpensive winter recipes will warm you up when the time comes.
In the same spirit, we comforts around a pumpkin and almond milk velouté, a winter vegetable soup that will delight until the summer months. Then, we rely on the Welsh recipe for Welsh rarebit with dark beer, as decadent as it is delicious, to finish with the wonderful Dutch baby pancake with bananas by Hélène Darroze, which we find this month in Top Chef season 14.
On the side of our regions also adored, we play comfort with a traditional recipe from the Saint-Marcellin region, marcellines. Let's then continue with a good Burgundy that will seduce everyone, to finish with a Mont Blanc with clementine.
For guests planned or not, we surprise during a cocktail dinner with hummus refreshed with goat cheese and coriander; and haddock croques in which smoked fish mischievously brightens up the béchamel. Finally, as verrines are always on the rise, why not offer small individual tiramisù, topped with caramelized seasonal fruit? Recipes accessible to all levels. But if we want to move to the next level, in this case, it's towards chef menu that we will head towards. Roasted sugar and egg yolk sauce; lean roast, peas, fermented milk; and especially panna cotta with olive oil, butternut and rosemary gel, will surprise our world.
For the brunch on Sunday, why not combine sweet potato pancakes with egg çilbir and spiced butter? As a final word, brioche, especially when combined with homemade salted butter caramel, is always a good idea.
Finally when the weather is milder, the spring recipes will be preferred. White fish toast in gravlax; asparagus salad, poached egg, peas, arugula, pistachio dukkah; or Greek yogurt cheesecake, are just some of the recipes to cook in March.
