Chicken, the family institution
Chicken is one of the French people’s favorite recipes, but especially for family meals. The great classic: roast chicken. Cooked and served whole straight out of the oven, everyone chooses their favorite part. The wing, the breast or the thigh, we learn about everyone’s tastes and everyone finds something to their liking. While its smell fills the kitchen and into the dining room, we savor the tenderness of the chicken served with its traditional new potatoes or fried in the oven. Many have already experienced this atmosphere at a Sunday meal at grandma’s or on a Friday evening to celebrate the weekend at home.
How to cook tender chicken
To prevent the chicken from being dry, if you are preparing it in the oven, place it halfway up the oven with a few pieces of butter on its skin. When in contact with the heat, the butter melts and softens the skin of the chicken, all the while giving it a delicious flavor! A little tip when it comes out of the oven: cover the chicken with a sheet of aluminum foil for at least 10 minutes. This way, the juices from the chicken will spread throughout the flesh rather than in the dish when you cut it. If you are preparing it in a frying pan or casserole dish, make sure to cover it well with the juices that it releases throughout cooking, and, above all, cook it over a low heat.
Different ways to prepare chicken
Poultry, especially chicken breasts, are prepared in a pan – in a drizzle of olive oil or butter – or in a marinade in the oven. To prepare the chicken in a marinade, coat it with a spicy or soy sauce for example, before cooking, so as to obtain a crispy and tasty skin!
Otherwise, prepare a whole roast chicken. To give it more flavor, it is customary to stuff it with herbs, lemons, condiments (garlic or onion), or even vegetables like carrots or mushrooms. During cooking, what is integrated inside the whole chicken simmers and releases juices that soak directly into the flesh of the poultry.
To add a sweet/savory flavor to your chicken, feel free to add dried fruits to the roast chicken if you choose to stuff it. Otherwise, brush it with a little honey or sweet soy sauce at the end of cooking!
