Plum and honey clafoutis
Ingredients
- 600 to 700 g plums French
- 3 eggs
- 80 g sugar (or 50g if honey is present)
- 2 c. tbsp honey
- 100 g flour
- 25 cl of milk
- 20 g butter melted (+ a little for the mold)
- 1 bag sugar vanilla (or natural vanilla)
- 1 pinch salt
Instructions

Preheat the oven to 180°C.

Wash, pit and cut the plums in half.

Butter a mold and place the fruit at the bottom.

In a salad bowl: whisk the eggs with the sugar and vanilla sugar, add the flour and a pinch of salt, gradually pour in the milk, add the melted butter and honey. Mix until you have a smooth paste.

Pour the mixture over the plums.

Bake for around 35 to 40 minutes, until the clafoutis is golden and slightly puffed.

Serve warm or cold, with a spoonful of crème fraîche, an extra drizzle of honey, or a scoop of vanilla ice cream.

For a more fragrant version, add: a little cinnamon, or some lemon zest to the mixture.
