Plantain omelette

Ingredients

  • 10 eggs
  • 1 ripe plantain cut into 2.5 cm rounds
  • 1/2 green pepper
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1/2 red onion
  • 1 sausage
  • 1/2 tablespoon(s) of granulated garlic
  • 1/4 tablespoon Italian dry seasoning
  • 1/4 tablespoon(s) freshly ground black pepper
  • 1/4 tbsp chili powder (optional)
  • 1/4 tablespoon(s) paprika
  • 1 stock cube (optional)
  • vegetable oil

  • salt, pepper

Preparation

  1. Preheat the oven to 180°C. Cut the peppers and onion into cubes and the sausage into slices.

  2. Heat some oil in a casserole dish and simmer the plantain slices for 5 minutes until they are golden brown. Drain on absorbent paper and set aside.

  3. Brown the sausage in an oiled pan over medium heat for 1 minute, then drain and set aside.

  4. Break the eggs into a salad bowl and add the spices (granulated garlic, Italian seasoning, pepper, chili powder, paprika), salt and optionally the stock cube. Whisk. Stir in most of the peppers, onion and fried banana, reserving some for garnish.

  5. Oil a pie dish or ovenproof frying pan. Pour the mixture into it, then sprinkle with the reserved ingredients. Bake for 10 to 15 minutes, let rest for 2 minutes and enjoy hot.
