An autumn gastronomic menu for an exceptional evening

A big occasion to celebrate? Guests to impress? Let yourself be guided by our four-course autumn gastronomic menu.

In Michelin-starred establishments, menus often include seven different dishes. Ultraviolet, run by Paul Pairet in Shanghai, even has around twenty services.
However, far be it from us to overload you with preparation. This, especially since you certainly don’t have an armada of chefs to help you. We limited ourselves to four stages: appetizer, starter, main course, dessert. On the budget side too, we didn’t do anything crazy. No caviar or foie gras, but tasty seasonal products, to satisfy the most gourmet palates without spending your salary.

Take out the silverware and the beautiful dishes, tonight you will eat gourmet at home.

Your seasonal gourmet menu

To start this meal off in the best possible way, we offer you an appetizer based on porcini mushrooms and serac. This fresh mountain cheese, whose texture is similar to that of ricotta, pairs perfectly with the earthy flavor of mushrooms.
Another interesting aspect of the recipe is the play on textures. Creamy, crunchy, smooth… This is an appetizer that should excite your taste buds.

Then comes a starter giving pride of place to seafood and seasonal products. Skate, razor clams, squash and turnip alternate to form a melting, salty mille-feuille. This recipe can be made the day before, if you need to get a head start on the preparations.

After the lightness of the starter, it’s time for indulgence with the main course: a can roasted in the oven with potatoes, accompanied by grilled corn, chanterelles and death trumpets. The flavor of the game is enhanced by a gourmet mushroom sauce (and without fat).

Of course, this sumptuous meal couldn’t end without an equally fabulous dessert. So, we suggest you make a seasonal charlotte with pears poached in jasmine tea, a very delicate pastry.
Be careful, the whipped cream stuck to the gelatin must rest for at least 6 hours in the fridge to solidify. You will therefore need to do so in advance.

To accompany all this, a grape and thyme cocktail will be perfect.
