But we also have an unfortunate tendency to only cook clafoutis with cherries. This makes sense, it is in this version that he acquired his fame, without forgetting the eternal debate “with or without core?” “. But we get lost. Clafoutis is an easy dessert made with eggs, sugar, flour and milk. The same base as the pancake batter, only the proportions change. The advantage of this dessert, which does not require any specific mold, is that it can be made with all seasonal fruits. Peaches or apricots in summer; plums or figs in autumn; mango, oranges or clementines in winter, the variations are numerous.
For this Sunday, we suggest you replace the cherries with white and black grapes, delicious and juicy as you wish. The perfect fall dessert!
Sunday recipe: clafoutis with white and black grapes
Preparation time: 15 minutes
Cooking time: 35 minutes
300 g of white and black grapes
100 g of sugar (+ 1 level tablespoon for finishing)
3 eggs
100 g of T65 flour
1 pinch of salt
30 cl of milk
1 knob of butter
Wash and dry the grapes.
In a container, mix the sugar and eggs. Add the flour and salt, then pour in the milk while whisking.
Preheat the oven to 180°C.
Spread the grapes in a previously buttered baking dish.
Cover them with the mixture and bake for 35 min.
When the clafoutis is golden brown, take it out of the oven and sprinkle it with sugar.
Enjoy warm or cold.
