Ingredients
- 1 live lobster of 800 g
- 50 g of unsalted butter
- 1/2 head of garlic
- 10 g of brined capers
- 1 bunch of chives

In a saucepan, heat the butter until it reaches 190°, then add the peeled and chopped garlic. Remove the pan from the heat and set aside. Leave to rest for about 1 hour, filter the butter and add the rinsed and finely chopped capers. Reserve.

Light the barbecue until you get nice glowing embers. Cut the lobster in half lengthwise, and place it directly on the grill to cook gently. Let the internal temperature of the lobster rise to 48° and remove it from the heat.

Coat the cooked lobster with garlic and caper brown butter, then sprinkle it with washed, dried and finely chopped chives.
