How to make a crepe cake?
To make it, it’s very simple, all you have to do is stack up as you wish a good dozen crepes that you assemble like a mille-feuille with a filling that you spread in a thin layer. Taste-wise, everything is possible and imaginable: pastry cream, jam, lemon curd, orange marmalade, hazelnut spread, chestnut cream, apple compote, homemade praline, melted chocolate, etc. A fun staging idea, for a dessert that simply needs to be cut into pieces before serving.
