Chicory, a better ally than coffee?

We continue to praise its merits: this roasted root, devoid of any stimulant, would be the ideal alternative to coffee. “Rich in soluble fiber, it improves digestive health by stimulating the growth of beneficial bacteria in the intestine,” explains chef and naturopath Angèle Ferreux-Maeght. It also promotes detoxification, preventing indigestion and bloating.

A FRIEND IN THE KITCHEN

“Its brown color, its intense taste with caramelized and toasted notes make it an ingredient to put in every cupboard,” writes Laurène Petit in “Chicorée, 10 ways to prepare it” (Les Éditions de l'Épure). Gourmets distill it into both savory and sweet preparations. Angèle Ferreux-Maeght enjoys it in a latte or in tiramisu, instead of coffee.

A RECIPE FROM ANGLÈLE FERREUX-MAEGHT

For a chicory latte: heat 1 cup of rice or oat milk in a saucepan. Add 1 tbsp. of soluble chicory, mix, then 1 tbsp. of marine collagen. Whisk until frothy.
