Cucumber peel soup with Greek yogurt


  • the peels of 6 cucumbers

  • 3 Greek yogurts
  • Espelette pepper

  • mint leaves

  • 2 tablespoon(s) of olive oil
  • salt


  1. Put the cucumber peels with the Greek yogurt and a pinch of salt in the bowl of a blender. Mix until you obtain a very smooth mixture.

  2. Add a large pinch of Espelette pepper, the leaves of 2 sprigs of mint and 1 tbsp. tablespoon of olive oil.

  3. Mix again.

  4. Pour into a serving dish. Sprinkle with Espelette pepper, drizzle with the remaining olive oil and sprinkle with a little chopped mint.
