Duck breasts with black grapes and maple syrup

Ingredients

  • 2 small duck breasts
  • 280 g of black grapes
  • 3 long pepper kittens
  • 4 sprigs of thyme
  • 8 tablespoons maple syrup

Preparation

  1. Break the pepper kittens into several pieces. Using a very sharp knife, score the fat from the duck breasts.

  2. Wash the grapes and dry them.

  3. In a very hot frying pan, brown the duck breasts on the fat side for 4 minutes. Remove the fat from the pan. Turn the duck breasts over, add the grapes, pepper pieces, thyme sprigs and maple syrup. Continue cooking for 7 minutes over medium heat for a pink cooking, basting the duck breast regularly with maple syrup.

  4. Wrap the duck breasts in aluminum foil for 5 minutes, then cut them into slices and serve them with the grapes and maple syrup juice.
