The carrot is one of the stars of our kitchens. According to a study by Interfel (Interprofession of Fruits and Vegetables), it is the second most consumed vegetable by the French, ahead of the potato!
Beauty and health ally
The carrot is an ally for the skin, thanks to the vitamin A precursor it contains – whose name is practically eponymous. This is beta-carotene, an excellent antioxidant that helps fight cellular aging.
Still thanks to the beta-carotene present, eating carrots helps preserve your eye health.
A true nutraceutical, the carrot would also reduce the risk of diabetes due to its low glycemic index and control cholesterol levels because it is a source of fiber.
Enjoy carrots in autumn
Eating carrots in the fall is a great idea because it strengthens the immune system, which we definitely need at this time of year. In addition to its vitamin A content which stimulates the production of white blood cells essential in the body’s defense against viruses and bacteria, this root vegetable contains phytonutrients which have properties that protect our body’s cells from potential damage. So, faced with the various threatening seasonal viruses, we do not hesitate to brandish the carrot.
Endless choices
Grated, iced, creamed, velouted, raw, cooked… There are so many ways to prepare, present and above all taste this root. It will be excellent in a vegetable juice, delicious in kimbaps, ideal in a stew. With the different varieties and colors of carrot (yellow, white, orange, purple), the range of possibilities is immense. In addition, you can cook the whole carrot including its tops to make a pesto or a soup, or even a tea. Enough to remain fans of this vegetable!
This fall, we are opting for comforting and family dishes, between roasted vegetables and tarte tatin.
