Four years after the victory of Lyon chief Davy Tissot, Auvergne Paul Marcon who won the 20th edition of the Bocuse d’Or, hitherto owned by Denmark. An exceptional competition
A real world cup of cooking, the golden bocuse is the most prestigious and demanding culinary competition in the world. Created in 1987 by the legendary chief Paul Bocuse, his final takes place every two years, and brings together the best chiefs on the planet. Then 5:30 am to make a main dish accompanied by three fillings, around deer, foie gras, and tea. Among the creations made by the chief and his clerk: “Small confit with edge butter, core of pliers and lobster medallion”, “crispy shoulder -tole tree crawlth with red wine, foie gras, wild mushrooms” Or “two -color ravioli, mushrooms and almonds, consumed of deer infused with Assam Mokalbari black tea”. An exceptional performance welcomed by Davy Tissot, winner in 2021 and president of the International Organizational Committee of the Bocuse d’Or. “It was chiseled, it was clean, it was clear,” he told the press.
A family story
Exactly thirty years after the victory of his father, Régis Marcon, in 1995, Paul Marcon, at only 28 years old, perpetuates family excellence and again hoists French gastronomy at the top. “It’s a childhood dream come true.
