Fresh goat's cheese crostini, beans and mint, honey and lemon

Ingredients

  • 4 slices of country bread
  • 160 g of fresh goat’s cheese, Petit Billy type
  • 80 g of fresh shelled beans

  • 1 organic lemon
  • 2 sprigs of mint
  • 4 tablespoon(s) of honey

  • 1/4 teaspoon(s) of Espelette pepper
  • 4 tablespoon(s) of olive oil

Preparation

  1. Toast the bread slices.

  2. Bring a large pot of salted water to the boil, add the beans, and let them cook for 3 minutes. Drain them and cool them. Remove the film if necessary.

  3. Zest the lemon. Squeeze half a lemon to extract the juice. Finely chop the mint.

  4. Mix the honey, mint, lemon juice, Espelette pepper and olive oil. Salt.

  5. Spread the goat cheese on the toasted bread, cover with the beans and drizzle the sauce over everything. Sprinkle with lemon zest and enjoy quickly.
