Artichoke hummus with spices, candied lemon and grilled pepper artichokes


  • 4 peppered artichokes
  • 400 g drained artichoke hearts in oil
  • 4 cloves of garlic
  • 1 preserved lemon
  • 1 tablespoon(s) of sesame paste
  • 1 teaspoon(s) of garam masala
  • 1 teaspoon(s) of cumin
  • 1 teaspoon(s) ground coriander
  • 5 tablespoon(s) of olive oil
  • 1 teaspoon(s) of sesame seeds
  • juice of 1 lemon


  1. Peel and cut 2 cloves of garlic into 4.

  2. Cut half a candied lemon into brunoise and cut the rest into large cubes.

  3. In the blender bowl, place the artichoke hearts, sesame paste, large diced candied lemon, garlic cut into 4, spices and 2 tbsp. tablespoon of olive oil. Salt, pepper and mix finely. Pour everything into a bowl, sprinkle with candied lemon brunoise, sesame seeds and sprinkle with 1 tbsp. tablespoon of olive oil.

  4. Cut the stems of the artichokes. Cook them for 15 minutes in a pan of boiling salted water. Then cut them in two lengthwise.

  5. In a bowl, mix the remaining peeled and chopped garlic, 2 tbsp. tablespoon of olive oil and lemon juice. Brush the artichokes with this marinade. Salt, pepper. In a hot pan, grill them for 5 minutes, cut side towards the pan, then turn them over and continue cooking for 3 minutes.

  6. Enjoy them with hummus.
