Honey and spices muffins

Spice muffins with, in addition to the scents, the health benefits of the ground clove. Recipe from the book Super microbiota.

Ingredients for 8 muffins

  • 700 g almond powder
  • 50 g of ground blonde flax seeds
  • 2 tsp. to s. blond psyllium integuments (prebiotic)
  • ½ tsp. to c. Moulus cloves
  • 1 tsp. to c. gingerbread
  • 1 sachet of baking powder
  • 90 g of honey
  • 4 tsp. to s. chicory inulin (prebiotic)
  • 1 egg
  • 200 ml of coconut milk
  • 100 g of softened butter

Preparation

Preheat the oven to 180 ° C.

Line a baking sheet with baking paper.

In a large bowl, coarsely mix the almond powder, linen seeds, psyllium, cloves and spices, yeast, sweetening and inulin, coarsely mix.

Aside, in a small bowl, whisk together the egg, coconut milk and butter. Pour this mixture into the dry part and mix until the dough is consistent.

Fill muffin molds with the dough obtained.

Cook the muffins for about 30 min until a tip of the knife comes out dry from the cake. Let cool.

Noticed

The recipe offers you the opportunity to add 4 tsp. to s. of inulin to the dry part of the recipe, which makes it possible to obtain muffins each containing about 2 g of prebiotic fibers.
