Muscat de Hamburg, Chasselas, Alphonse Lavallée, or even seedless varieties, there are many types of grapes, each with its own specificities. In cooking, grapes are a good paste, they are disconcertingly simple. We clean it, and immediately it can be put into the pan. Whether simmered in a sauce, roasted with filet mignon, pan-fried, everything suits it! More simply, you can also include it raw in an autumn salad, there is no need to cook it. Moreover, most of the time, it is enjoyed in the raw version, while it works wonders in the cooked version.
As it is sweet, we tend to only think of it at dessert time. But in a savory version too, you can cook the grapes. Risotto, sweet-salty duck breast, or cheese-fruit combination, here are 3 grape recipes to try this fall.
Recipe no. 1: Gorgonzola, speck, grape and Treviso risotto

A recipe that combines the tenderness of cooked rice, the power of gorgonzola and the sweetness of grapes.
How to do it? Finely slice 2 peeled yellow onions. We wash and cut 400 g of grapes in half.
In a large saucepan, melt 40 g of butter and 1 cl of olive oil.
Sweat the onions and grapes for a few minutes, add 300 g of arborio rice and mix until it becomes translucent. Deglaze with 5 cl of white wine. Add salt and pepper to the mill.
When the wine is absorbed, add ladle after ladle of 1.5 liters of chicken stock, waiting for the stock to be well absorbed between each addition.
At the end of cooking, add the gorgonzola in pieces and let it melt while mixing. Serve in four deep plates with a slice of speck and a few Treviso leaves.

Recipe no. 2: Duck breasts with black grapes and maple syrup

Duck breast goes wonderfully with the sweetness of black grapes and the intoxicating scent of maple syrup. The perfect fall recipe.
How to do it? We break 3 catkins of long pepper into several pieces. Using a very sharp knife, strip the fat from 2 small duck breasts.
We wash the grains of 280 g of black grapes and dry them.
In a very hot pan, brown the duck breasts, fat side down, for 4 minutes. Remove the fat from the pan. We turn the breasts over, add the grapes, the pieces of pepper, 4 sprigs of thyme and 8 tbsp. tablespoon of maple syrup. Continue cooking for 7 minutes over medium heat for pink cooking, regularly basting the duck breast with maple syrup.
Enclose the duck breasts in aluminum foil for 5 minutes, then cut them into slices. The meat is served with grapes and juice.

Recipe no. 3: Roasted feta with grapes, honey and spices

Roasted feta is always a good idea, whatever the season!
How to do it? Drain 200 g of feta. Rinse 200 g of mixed black and white grapes.
Place the feta in a baking dish. Spread the grapes all around. We water with 4 tbsp. tablespoon of honey and sprinkle with 1/2 tsp. teaspoon of cumin seeds, 1/2 tsp. teaspoon of powdered coriander, 3 or 4 pinches of smoked paprika. We pepper and pour 2 tbsp. tablespoon of olive oil.
Leave to cook for approximately 15 to 20 minutes in the oven preheated to 180°C.
A delight to serve with bread or breadsticks.
