Recipe no. 1: Red lentil and sweet potato balls, curry yogurt sauce
Creamy balls, refreshed with spicy yogurt.
How do we do ? We cut a peeled sweet potato into cubes. Cook it for 25 minutes in boiling water, adding 150 g of coral lentils after 10 minutes. Drain then mash with a potato masher until you obtain a smooth mixture.
Mix 1/2 red onion, 1 clove of garlic, 60 g of sandwich bread, 1 tbsp. tablespoons of cumin powder, 5 sprigs of leafy and chopped flat-leaf parsley, salt and pepper. Mix with the sweet potato-red lentil puree. Form 35g balls and refrigerate for around thirty minutes.
Place the meatballs in a dish with a little olive oil and bake at 200°/th. 6-7 for 20 to 25 min.
Mix 500 g of Greek yogurt, the zest of 1 lime and a few drops of juice, 2 tbsp. tablespoon of curry powder, salt and pepper. We serve the meatballs with the sauce, a few strips of red onion and small sprouts.

Recipe no. 2: Coral lentil, pork and carrot soup
A delicious and creamy dish. We appreciate the mix of textures between velvety, crunchy and soft meatballs.
How do we do ? Pour 200 g of coral lentils into 50 cl of boiling water with 1 stock cube, leave to cook for 10 minutes. Mix with 10 cl of water, salt and pepper.
Mix 500 g of sausage meat with 2 tbsp. curry coffee, 1 tbsp. teaspoon of brown sugar, salt, and form 16 balls. Sear the meatballs for 10 minutes in an oiled pan, remove and keep 1 tbsp. of cooking fat in the pan.
We slice 2 peeled carrots into small cubes. Sear them for 10 minutes with a little salt and pepper.
The velouté is served with the meatballs, carrots and a little chopped coriander.

Recipe No. 3: Vegetarian Savory
The winter and vegetarian version of the famous savory dish.
How do we do ? We cut 1 onion and 1 clove of garlic into small pieces. We brown them in an oiled pan.
We slice 1 peeled carrot and 1/2 leek into half rings, which we leave to cook for 1 to 2 minutes.
Add 250 g of dry green lentils to the pan with 1 bay leaf, 1 large pinch of salt and 50 cl of water. Let it cook for 25 minutes, covered, over low heat. We season with 1 tbsp. mustard, salt, pepper, parsley and chopped coriander.
