This week, let's welcome spring as it should be, with recipes.
Lightness, freshness and color: these are the key words of seasonal cuisine. For this new week of March, let's still enjoy the flavors of winter with the last citrus fruits in salad, lemon tiramisu and some slow-cooked dishes. Then, let's welcome the first colors of spring, with seasonal fruits and vegetables: from asparagus cooked with a fillet of turbot and rhubarb for dessert, to cauliflower that we prepare as caviar with tahini. While we use a few pomegranates and herbs to color the plate, we enhance our preparations with sauces of maple syrup, honey, yogurt, harissa, even curry butter, turmeric and tarragon. One thing is certain, this week, flavors and colors will be varied!

Your shopping list for the week
After making sure you still have your cupboard basics: olive oil, salt, pepper, butter, sugar, flour, eggs, garlic, onion and shallots, head to the primeur. Side vegetables, you will need green asparagus, button mushrooms, shiitake mushrooms, cauliflower, turnips, peas, leeks, parsnips, Brussels sprouts, carrots, white beans and fingerling potatoes. At the level of fruits, these will be clementines or blood oranges, pomegranate, yellow and green lemons. Finally, as always, the herbs and spices will also be there, with coriander, chives, flat-leaf parsley, mint, basil, cumin, nutmeg, Espelette pepper, pumpkin seeds and sesame.
Then, head togrocery storewith, salty side : wheat, mung beans, nuts, tahini, miso paste, tomato pulp, soy sauce, harissa, sesame oil and chicken stock. Sweet side : rhubarb compote, meringue, coconut milk, spoon biscuits, coconut shavings, dark chocolate, spread, chocolate chips, demerara sugar (brown sugar), honey, maple syrup, vanilla extract , dried cranberries, orange blossom, orange marmalade, orange juice and cornstarch.
Small detour to the butcher's shop to buy ground beef, chorizo and a nice whole chicken.
Right in front, at the fish shopa fillet of turbot will suffice.
Allow space in your shopping bag, since in the aisle dairy productsthe list is long: mozzarella di bufala, milk, crème fraîche, cream cheese, mascarpone, Greek yogurt, petit-suisse, parmesan and grated gruyere.
Before going to the stove, last stop at the bakery to buy a baguette and a few slices of sandwich bread.
