With days without sun and low temperatures, winter is the season when our body needs vitamins, minerals and amino acids to counter these climatic changes. Sweet potatoes, carrots, leeks or carrots: everything is placed in the heart of a seasonal tart for a combo that everyone can agree on.
Preparing a winter pie
There are several ways to prepare a winter pie. For a thin tart, place the desired ingredients on a layer of dough, cut into slices and cooked beforehand. Then simply put everything in the oven without forgetting to season of course (salt, pepper, herbs). You can’t go wrong with a leek and bacon tart, a classic combo that’s sure to please.
For a quiche, we first prepare the mixture with eggs and crème fraîche or fromage frais (goat cheese, feta, ricotta, etc.) before adding vegetables. Carrot, onions, broccoli, or spinach all go perfectly with cheeses with pronounced flavors. Vegetables can be replaced by other garnishes but above all they provide a good dose of vitamins to our dish.
Good pasta
Depending on the pie you want to make, there are different types of dough, all available in supermarkets, in a ready-made version, but you can also try making a homemade dough. The dough that is best suited to preparing a savory tart is shortcrust pastry, with its smooth and crunchy texture. Made from flour, butter and water, it is quick to make, light after cooking and holds up to all toppings.
More difficult to achieve, puff pastry is delicate and subtly crisp in the mouth. For the more ambitious, it is entirely possible to make a quick puff pastry at home, for a 100% homemade tart.
You can obviously opt for a gluten-free pie crust, by replacing wheat flour with rice flour for example.
And for a homemade vegetable pizza, we make a pizza dough, based on water, flour and yeast, before covering everything with the topping of your choice.
Tips for successful cooking
Regardless of the dough chosen, it is cut into the desired shape, generally into a disk when making a classic tart. Want mini-tartlets? No worries, just use individual molds. Also, don’t forget to prick the dough with a fork to avoid getting “blisters” during cooking.
Winter Comfort Foods
Our body needs specific nutrients during winter. Good news, root vegetables, available during this season, are full of vitamins, minerals and trace elements that we lack when temperatures start to drop. Carrot, parsnip, beetroot, turnip, leek… All winter vegetables are rich in dietary fiber and minerals such as potassium, iron, magnesium and calcium.
To eat well in winter, we always opt for seasonal vegetables and fruits, regardless of the recipe followed. This allows us to consume responsibly but also to be consistent with the needs of our body. There are also many foods that are good for your morale, such as cheese, to add without hesitation to your winter quiches and savory tarts. Cheeses with strong flavors add strength, while ultra-smooth melted cheeses (hello raclette) instantly provide a feeling of comfort. You can also play the sweet and sour card by combining cheese with apple, or the latter with black pudding. Very low in calories, mushrooms slip just as easily into your preparations, ideal for light and tasty pies.
