Spring rolls with quinoa, coriander, edamame, and Laughing Cow cheese

Ingredients

For 12 spring rolls

  • 100 g quinoa
  • 100 g edamame beans

  • 1 spring onion

  • 1 bunch of coriander
  • 2 handfuls of mung bean sprouts
  • 6 laughing cow
  • 1/2 teaspoon(s) powdered ginger
  • 12 rice papers frying oil

Preparation

  1. Cook 100g quinoa according to the instructions on the packet. Blanch 100g edamame beans for 5 min in boiling water, then rinse under very cold water.

  2. Wash and chop 1 spring onion and its stem as well as a bunch of coriander. In a salad bowl, mix the quinoa, edamame beans, onion, coriander and 2 handfuls of mung bean sprouts. Add 6 Laughing Cow and 1/2 tsp of powdered ginger. Mix well.

  3. Moisten 12 rice sheets one by one on a clean cloth. Fill them with stuffing in the center. Fold each end over then roll to form spring rolls.

  4. Heat some frying oil in a frying pan and fry for 4 to 5 minutes.
