Sweet cheese cakes


For 40 cakes

  • dough

  • 250 g of soft wheat flour + 250 g of all-purpose flour
  • 1 large egg
  • 1 glass(es) of raki or grappa
  • 2 tablespoon(s) of oil
  • salt

  • 1 kg of unsalted hard cheese
  • 600 g of sugar
  • 4 large eggs
  • 2 vanilla pods
  • 1 pinch of grated putty
  • the zest of an orange


  1. Prepare the dough. Mix all the ingredients and create a soft dough by adding hot water, being careful not to add too much at first.

  2. Prepare the stuffing. Grate the cheese and mix with all the other ingredients, kneading them with your hands.

  3. Make strips of the dough using a pasta machine, then cut them out with a round cookie cutter or using a cup.

  4. Place a teaspoon of stuffing in the center and pinch the edges with a toothpick. Sprinkle with sugar.

  5. Preheat the oven to 150°C.

  6. Cook over rotating heat for 40 minutes. The cakes are ready when they turn a beautiful golden yellow color.
