If autumn and winter comforted us with their warm shades, the bright tones of spring invigorate us. On the menu, find pink, with rhubarb and radish, red for strawberries and tomatoes, green for beans, peas, and asparagus… Without forgetting the orange tones, brought by new carrots.

If spring is synonymous with lightness, that doesn't stop brunch from being delicious. Some breakfast classics, such as brioches, spreads, salmon gravlax and other scrambled eggs, can be made all year round, because they depend little or not on seasonality (be careful to favor responsible fishing for salmon). So you can continue to enjoy your favorite recipes.
As for the products available from March to May, it is easy to make them appetizing. Take strawberries for example, which are available in tarts and cakes, or spring vegetables, which are included in delicious quiches. For the latter, preparing them with fresh cheese is always a winning combination.
Complete
As brunch combines both breakfast and lunch, it must be as complete as possible. Even if the ailments of winter seem to be fading away, our body needs to be boosted all year round. Which involves providing it with all the necessary nutrients, namely fiber, vitamins, proteins and carbohydrates.
As a reminder, you will find the first two in fruits and vegetables. Proteins are hidden in meat, fish, eggs, cheese, oilseeds and seeds. As for carbohydrates, they are easily found in cereals and cereal-based recipes, such as bread, granola, cakes, etc. Note that we are talking about complex carbohydrates, those which give energy, and not simple carbohydrates, which make our blood sugar take a roller coaster ride!
Finally, don't forget to accompany brunch with a drink. Too often, we forget that rehydrating the body as soon as you wake up is essential to get your body going. So we're thinking about preparing a tea, a latte, or why not a spring drink, if the weather is nice. Made with fruit, flowers, champagne or sparkling water, it will bring a festive and friendly touch, so characteristic of brunch.
