How to use chestnut cream in a dessert?
If you love eating chestnut cream with a spoon, you can also slip it into many pastry preparations. Very simply, you spread it on bread, pancakes or waffles, to replace homemade spread. Next step, we add it to creams and cake batters, to enjoy its sweet flavor.
Small precaution: if you use chestnut cream, and not chestnut paste or puree which are unsweetened, reduce the quantity of sugar in the recipe. Chestnut cream can also be used as fat in pasta recipes. You won’t lose calories, but you will gain softness.
In autumn, combine chestnut cream with seasonal fruits: apples, pears, clementines… You can even combine it with pumpkin, both in savory and sweet recipes, with which it works wonders. Don’t skimp on spices like cinnamon, cloves and star anise, which will warm everything up. As for oilseeds such as walnuts, almonds and hazelnuts, they will be perfect for adding a crunchy touch.
Our best ideas for autumnal chestnut cream desserts
An Ardèche cake. Soft and regressive, the Ardéchois is incomparably delicious.
Recipe. Whisk 3 eggs with 200 g of chestnut cream and 100 g of melted butter. Add 100 g of flour, a sachet of yeast and a pinch of salt. Mix. Bake the cake at 180°C for 40 min. Check the cooking with the tip of a knife, it should come out moist but clean.
Optionally, add 3 tbsp. tablespoons of dark rum to your dough.
An express chocolate-chestnut fondant. Three ingredients are all you’ll need to make this quick, gluten-free chocolate cake.
Recipe. Mix 500 g of chestnut cream with 100 g of melted chocolate. Add 3 whole eggs, then bake for 30 minutes at 160°C.
You can add a good pinch of cinnamon for an autumnal touch.
Mont-blanc style autumnal verrines. For a stunning dessert, make pear and chestnut cream verrines.
Recipe. Caramelize diced pears in a buttered pan. Whip 20 cl of whipped cream, then add 50 g of chestnut cream.
Arrange the caramelized pears in the bottom of the glasses, cover them with chestnut whipped cream. Crumble meringues on top.
Our advice: add the crumbled meringues at the last moment, so that they are still crispy when eaten.
