Fresh cheese for dessert, the perfect combination
Fresh cheese is an unripened cheese, which does not age in a cellar, unlike a Comté, a Tomme or a Saint-Nectaire. Without adding lactic ferments either, fresh cheese is made from pasteurized cream or milk, curdled or not. The preparation is then more or less drained, depending on the texture you want to give it. Without maturing time, the taste of fresh cheese develops with less strength and remains fairly neutral, making it easier to combine with sweet flavors. Its texture remains very creamy, which makes it deliciously smooth. Skyr is one of the only fresh cheeses, along with Petit Suisse, that can be eaten as is, plain or with a little honey or muesli. What about ricotta, cream cheese or mascarpone, those other fresh cheeses that invade the market stalls?
Which fresh cheese for which sweet recipe?
Although there are many fresh cheeses, in cooking, not all are assimilated in the same way. Cream cheese, with a very smooth texture, is best used for preparing cheesecake; mascarpone, very creamy, for tiramisu, and ricotta, both airy in the mouth and compact in texture, will be suitable for a tart.

Store fresh cheese
Be careful not to keep your fresh cheese for too long, since it does not keep in the same way as Reblochon or Camembert, mature cheeses. It is consumed quickly, within 3 days of opening the packaging, previously stored in the refrigerator.
