Making frozen nougat may seem daunting.
However, this frozen dessert, which does not require an ice cream maker or any special technique, is made from whipped cream and egg whites, using a simple electric mixer.
Various pralines, candied fruits or even toasted seeds… It’s up to you to adapt the recipe according to your desires. For me, black sesame, pecans and caramelized pistachios are the winning combination. It’s your turn!
My advice
- Don’t skip the roasting of the oilseeds, this is what gives intensity and length in the mouth to this dessert.
- I chose black sesame paste, but you can decide not to flavor the preparation. You can also add orange blossom or alcohol.
- Remember to line the mold into which you will pour the mixture, otherwise unmolding will be difficult. Another option: use flexible molds.
- If you don’t have a large mold, opt for small individual ramekins (without lining them) for faster cold setting.

130 g pecan nuts
70 g shelled pistachios
55 g sugar
1/2 level teaspoon of fleur de sel
40 cl of very cold whole whipping cream
1 tbsp black sesame paste
180 g of acacia honey
4 egg whites
50 g of red fruits

The day before, preheat the oven to 180°/gas mark 6. Spread the pecans and pistachios on a baking sheet.
Place the baking tray in the oven and roast the dried fruit for 10 minutes.

Then place them in a saucepan with 40 g of sugar and the fleur de sel. Let them caramelize for 5 to 8 minutes (depending on the power of the heat), stirring.

Spread them out on a baking sheet lined with parchment paper. Reserve a quarter for decoration, then chop the rest coarsely.

For easy unmolding, butter a charlotte mold.

Line it with cling film.

Using an electric mixer, whip the whipping cream with the remaining sugar. Once whipped, add the black sesame paste and honey while whisking, then add the chopped pecans and pistachios using a spatula.

Beat the egg whites until stiff, then fold them into the flavored whipped cream. This operation must be done with great delicacy.

Pour the mixture into the mold.

Store in the freezer for at least 12 hours.

The same day, when serving, unmold the frozen nougat onto a plate, decorate it with the remaining caramelized dried fruits and fresh red fruits.
