As its name suggests, this emblematic recipe is complete, and will delight fans of runny egg yolks.
Preparation of the complete buckwheat pancake
Once the buckwheat pancake is cooked, place ham slices or pieces in the center of it, keeping the pan over medium heat. We then add the grated cheese, traditionally Gruyère or Emmental, before cracking the egg on top. You must cook until the egg is “fried”, without forgetting to add salt and pepper. To finish, we fold the edges of our complete pancake towards the center, so as to form a square. And now, voila.

Buckwheat pancakes have no restrictions when it comes to garnishes. If the most famous recipe remains the famous complete pancake, they can be stuffed with all kinds of cheeses, which go well with many ingredients. With vegetables like leek, we opt for strong cheeses like goat’s cheese or feta. Mushrooms, on the other hand, go perfectly with most cheeses. For extra-gourmet pancakes, add cooked salmon, spinach, béchamel sauce, all topped with Comté cheese. Of course, we don’t forget the classic goat’s cheese-honey combo for all lovers of sweet and savory pancakes.
