The approach of summer is the perfect opportunity to organize picnics in full sun. To do this, nothing better than a good salad that combines freshness and seasonal produce.
For a lunch on the grass, mixed salads are the ideal option. As easy to make as they are to transport, they are infinitely available and allow a moment of 100% homemade pleasure. All you have to do is choose your favorite ingredients, cut them up and mix them in a bowl. And to prevent them from being softened at the time of tasting, we remember to take the sauce in a separate container, which we will add at the last moment.
How to make a picnic salad?
Vegetables, fruits, meats, pasta, rice, cereals… Salads have no restrictions in terms of ingredients or quantities. Obviously, for a recipe suitable for sunny days, we opt for seasonal products such as cucumber, tomatoes, peppers, or asparagus. These colorful foods bring freshness and vitamins to our body when temperatures rise. For example, you can be tempted by the essential Greek salad with feta, cucumber, tomatoes, peppers and red onion, for a picnic that smells like the holidays. And for a trip to the south of France, the Niçoise salad made with anchovies, tomatoes and olive oil never lasts long at mealtime (and even less so during lunch on the grass). As a base, we opt for rice, lettuce, pasta, or even quinoa. On the protein side: tofu, tuna, chicken, smoked salmon, or even mushrooms can be found in any recipe.
The sauce, to be added at the last moment before tasting, helps to bind the foods together and to season them. Olive oil, lemon juice, vinaigrette or mayonnaise: it's up to you to choose and dose as you wish. And to flavor everything, add a hint of fresh herbs such as basil, dill, coriander or parsley.
